Processing:

1. Harvesting: Ripe cherries are carefully hand-picked and selected.

2. Floating: The cherries are floated to remove any under-ripe or damaged fruit.

3. Anaerobic fermentation: The whole cherries are fermented in sealed bags for 96 hours.

4. Drying: The coffee is dried in a parabolic dryer for 18 days
